I recently saw a post on FaceBook that said something like “Sometimes the only transportation available is to take a leap of faith!” That rings true to me, especially lately. When Life and Circumstances lead me to a place that I know is the precipice to another level of helpful growth, sometimes fear sets in. The higher the potential for growth, the heightened the fear, it seems. That’s the time I most need to get very quiet, breathe deeply and trust. And then continue on – taking that leap of faith.

Trusting that by stepping out of my comfort zone and risking the  move through the doubts and fears, I will find the biggest prize waiting for me. It always, always, always works out that way, yet…

Deep down, I know this to be true but sometimes I still squirm and resist taking that leap, looking to go anywhere else but there! Wasting time and energy with people and things that will not serve me in a positive way. Then,worn out, I “jump” and move through that which truly does transport me to a better place. Lessons learned, rewards earned and trust renewed. And gifts received. There are always gifts!

Similarly, I experienced the “leap of faith and trust” thing when I stumbled upon this recipe. One morning I was making my usual protein shake and wanted to put a healthy fat into it. I was out of almond butter and coconut oil and as I looked around my kitchen, my eyes landed on a lone avocado. I adore avocados, but in savory dishes. Once when I was vacationing in Rio de Janeiro I was served a sweet avocado soup and I had a stomachache for the rest of the day. Just remembering that soup can turn my stomach!

I was determined to put a healthy fat into my shake that morning! So, I scooped out the pulp and bravely dropped the entire avocado into the blender along with my chocolate protein powder and usual shake ingredients.  I didn’t even consider that I really shouldn’t be drinking an entire avocado! I blended it on high speed and when I looked down though the clear cover I saw a thick, shiny mixture!

Now what had I done? Dismayed, I scooped the chocolate mixture out and into a bowl. I looked at it and considered throwing the whole mess into the trash. And yet, it sort of reminded me of chocolate pudding. It might be good!

“But remember that disgustingly sweet Brazilian avocado soup!” my mind screamed at me.

I ate a spoonful anyway, wanting my breakfast already. It tasted creamy, silky and perfectly chocolaty! Delicious and good for me? I have to confess, I ate the entire bowl that morning. What a discovery! What a gift! Trust me, you – and whomever you serve this to – will love it!

Healthy Yum Chocolate Pudding

I love serving this because not only does it taste fantastic, I know it’s not laden with sugar and empty calories. The Arbonne Chocolate Protein Shake Mix provides 20g of vegan protein, the Arbonne Fiber Boost provides 12g of fiber and the avocado is a beneficial and healthy fat. Healthy fats keep our cell membranes healthy as well as protect us from hypertension, heart disease, depression, joint pain and inflammation – just to name a few things!

Raw cocoa nibs are simply broken bits of cocoa bean. Raw cocoa and cocoa nibs are an amazingly high source of antioxidants – beating out blueberries, red wine and green tea – in fact cocoa nibs have four times the quantity of antioxidants than  green tea does! They are also rich in minerals such as iron, zinc, copper, magnesium, sulfur, calcium and potassium.

1 cup almond milk, or milk of your choice

2 scoops Arbonne Chocolate Protein Shake Mix

1 scoop Arbonne Fiber Boost

3 ice cubes

1 teaspoon vanilla extract

1 very ripe medium-sized avocado, cut in half

2 teaspoons raw organic cocoa nibs

How To Make Healthy Yum Chocolate Pudding:

Add the almond milk, protein shake mix, fiber boost and ice cubes into a blender jar.

Add in the scooped out pulp from half of the avocado.

Blend on high speed just until completely smooth.

Add in the vanilla and remaining avocado pulp and blend just until smooth and thickened. This takes just seconds.

Spoon into half-cup serving dishes and top each serving with a sprinkling of raw cocoa nibs.

Serve immediately or cover and chill in the refrigerator until ready to serve.

Makes 4, ½ – cup servings or as much as you are willing to share! This is too good!
